Cranberry Apple Crisp

Cranberry Apple Crisp - A belly warming holiday treat!

My sister is the “head cook” in our family.  Every holiday, she prepares a wonderful dinner and dessert. She shared this tasty recipe that guests can enjoy any time of the day.

Instructions:
Pre-heat oven to 375 degrees
Grease an 8-inch baking dish with cooking spray

For the filling, you will need:
1 ½ lbs of gala or granny smith apples
1 cup cranberries – fresh or frozen
1/3 cup granulated sugar
Topping:
2/3 cup whole-wheat flour
½ cup old-fashioned steel cut oats (not instant)
½ cup packed light brown sugar
1 tsp ground cinnamon
Pinch of salt
1 Tbsp butter cut into small pieces
1 Tbsp canola oil
3 Tbsp frozen orange juice concentrate
1 Tbsp chopped walnuts or pecans
Prepare filling:
Combine apples, cranberries and granulated sugar in a large bowl; toss to coat
Place the filling in the prepared baking dish and cover with foil; bake for 20 minutes
While the filling mixture cooks, prepare the remainder of the ingredients
Using a fork, mix flour, oats, brown sugar, cinnamon and salt in a medium bowl
Add butter pieces and combine using your fingertips
Add oil and stir to coat
Add orange juice concentrate and blend again with your fingertips until the dry ingredients are moistened
After 20 minutes, stir the fruit filling and sprinkle the topping evenly on top
Sprinkle with pecan pieces
Bake uncovered for 20 to 25 minutes until the fruit is bubbly and tender and the topping is lightly browned
Let cool for about 10 minutes and serve warm
*You can add a ½ cup of vanilla ice cream on top as well
